You'll need some simple ingredients like fresh salmon filets, shallots, garlic cloves, Dijon mustard, olive oil and poppy seeds. The result is an amazing combination of sweet and tangy flavors with a crunchy golden brown topping – delicious enough for company dinners yet also great weeknight fare too!
Ingredients
- 12 oz salmon, fresh
- 3 tbs poppy seeds
- 1 1/2 cup mixed greens
- 1/2 lemon

4+2 tbs olive oil

3/4 tsp salt

¼ tsp black pepper
Directions
1. Place the poppy seeds, a pinch of salt and pepper in a plate and coat the salmon fillets. Press with your fingers to help the seeds stick on.
2. Heat 4 tbs of olive oil in a pan and cook the salmon for 3-4 minutes on each side.
3. Serve hot with a side of mixed greens, drizzled with lemonjuice and the remaining olive oil.
