Ingredients
- 1 cup ground beef
- 1/2 cup rice
- 1 onion, red, small, chopped
- 2 green bell peppers, chopped
- 1 cup crushed tomatoes
- 3 cups vegetable stock

4 tablespoons olive oil
- 1 tsp mint, dried (thyme or oregano would also work)

1 tsp sea salt

1/4 tsp black pepper
Directions
1. Heat the olive oil in a saucepan and sauté the ground beef with the onion and peppers, for 5-7 minutes, seasoning with salt and pepper.
- 2. Add the rice to the saucepan and stir to absorb the flavors.
- 3. Pour in the crushed tomatoes and the stock, season with dried mint and cook for about 20 minutes adding a bit of water if needed.
- 4. Season to taste and serve hot.
