Ingredients
4-5 tomatoes, ripe, plum
- 1 1/2 cup cherries, pitted
- 1/2 green pepper (capsicum)
- 1/2 red pepper (capsicum)
- 1/4 onion
- 1/2 clove of garlic
- 1/2 cup breadcrumbs
- 1/4 cup water, if needed

4 tbsp olive oil

1 tbsp balsamic vinegar

1⁄2 tsp salt

1/4 tsp black pepper
Directions
1. Chop the tomatoes, onions, garlic, and peppers. Place the chopped tomato, onion, garlic, peppers and breadcrumbs in a large bowl. Add the olive oil, salt, pepper, and vinegar and mix well.
Cover and allow to marinate for about 8 hours or overnight in the fridge.
3. Then, add the cherries and process in a blender or food processor. Add water in a stream to reach your preferred consistency.
4. Strain the soup through a sieve and chill the gazpacho before serving.
