Ingredients
- 3 sweet potatoes, medium

1/2 cup olive oil
1 1/2 tbsp honey
1 1/2 tbsp vinegar

1/2 tsp salt flakes

1/3 tsp pepper, black
Directions
1. Preheat the oven grill to medium heat.
2. Rub the sweet potatoes with a bit of olive oil, salt flakes, and pepper and wrap them with aluminum foil.
- 3. Cook for 30-40 minutes until tender.
4. In the meantime, bring the remaining olive oil, honey, vinegar, and a pinch of flaky salt to a simmer for 4-5 minutes to make a thick syrup.
