Ingredients
- 3 potatoes, peeled, chopped
- 1/2 cup pancetta, diced
- 2 cups chicken broth
- 1 cup milk
- 1 onion, yellow, chopped
- 1 clove garlic, minced

1 tsp salt

1/2 tsp black pepper
- 1-2 spring onions, chopped, optional, to garnish
Directions
Heat the olive oil in a large non-stick pan and sauté the potatoes with the onions for 5 minutes. Add the minced garlic and stir, seasoning with salt and pepper. Stir and let the flavors combine for another minute.
- Add the milk and the broth. Bring to a boil and cook until the potatoes are tender, adding a bit of water if needed.
- Using a stick blender (or a regular blender) puree the soup until smooth.
- In a dry pan crisp the diced pancetta until golden brown, for 2-3 minutes.
- Serve the soup hot, topped with the crispy pancetta and optionally add chopped spring onions to garnish.
