Ingredients
1kg tomatoes, ripe
- 3-4 red onions

½ cup extra virgin olive oil
- 4 garlic cloves
- 2-3 red peppers
- 1 tablespoon honey
- 1 tablespoon balsamic vinegar
- 12-3 bay leaves

1 teaspoon salt

½ teaspoon red chilli flakes or black pepper
Directions
Slice the onions, tomatoes, garlic and red peppers. Heat the oil in a deep, heavy bottomed pan and sauté the onions for 5 minutes then add the peppers and garlic and sauté for 2 more minutes. Add the honey and vinegar and stir to caramelize.
Add the tomatoes, salt, pepper and bay leaves to the pan and cook with a closed lid for 50-60 minutes.
- The chutney should turn thick like a jam. Season to taste and remove the bay leaves. If there are large chunks crush them with the back of a fork.
Pour into sterilised jars, drizzle with a little extra olive oil and store upside down.
