Ingredients
4 large bell peppers
- 1/2 cup rice
- 1 cup soy mince
- ½ cup tomato sauce
- 1 medium sized onion
- 1 clove garlic

½ cup olive oil divided
- 1 teaspoon oregano
- ½ teaspoon paprika

1 teaspoon salt

¼ teaspoon black pepper`
Directions
Preheat the oven at 390°F degrees.
- Line a baking pan with parchment paper and set aside.
Chop the onion and mince the garlic. Heat the half the olive oil in a non-stick pan and sauté the soy mince with the onion for 5-7 minutes, adding the tomato sauce, rice and the garlic last. Season with oregano, paprika, salt and pepper. Allow to simmer for a few minutes for the rice to absorb the flavors, adding just a little water if needed.
- In the meantime, cut the tops of the bell peppers off, remove and discard the seeds.
- Spoon the rice-soy mixture into the pepper cups, carefully placing them on the prepared baking tray.
Drizzle with the remaining olive oil and bake for 30 minutes until golden brown.
- Serve warm.
