Ingredients
1 cup orzo pasta
- 1 large zucchini, diced
- 1 cup rustic Italian sausage, chopped
- ½ cup onion, diced
- 2 cloves garlic, minced
- 1 cup of spinach, chopped
- ½ cup tomato puree
- ¼ cup parsley, chopped
- 2 cinnamon sticks
- 5 cups water

Directions
Heat the olive oil in a deep sauce pan reserving a tablespoon to garnish.
Sauté the sausages with the zucchini and onions for 2-3 minutes, seasoning with salt and pepper. Add the garlic, parsley and spinach, mix well to combine the flavors. Cook for 2-3 more minutes.
- Toss in the orzo, stir to slightly toast it and add the tomato puree. Pour in the water. Add the cinnamon sticks and let it simmer over medium to low heat until the orzo is cooked, adding extra water if needed.
Serve warm drizzled with fresh olive oil.
