Ingredients
- 1/2 cup tuna, canned
- 1/2 cup lentils
- 1/4 cup beetroot, diced
- 1/2 avocado, sliced
- 1/4 cup feta cheese
- 2 tbs pumpkin seeds

3 tbs olive oil
- 2 tbs lemon juice

1 tsp salt

1/4 tsp pepper, black
Directions
Bring a pot of salted water to a boil and cook the lentils for 20 minutes, until tender. Drain and set aside.
- In the meantime, slice the avocado and beets.
Mix the olive oil with the lemon juice to make a simple dressing.
- Toast the pumpkin seeds in a dry pan for a few seconds until fragrant.
Mix the lentils with the tuna, beets and avocado in a salad bowl. Season with salt and pepper.
- Top with crumbled feta cheese and toasted seeds and drizzle with the dressing. Serve at room temperature.
