Our delicious recipe is made with feta cheese, mashed potatoes, and herbs, all lightly fried in a homemade batter for an extra crunch. Ingredients
- 2 cups milk
- 1/2 cup tapioca pearls
- 1 cup feta cheese
- 1/4 cup pecorino cheese

1 tbs balsamic vinegar

1/2 cup olive oil

1/2 tsp black pepper
Directions
In a saucepan heat the milk and tapioca pearls over low heat until the tapioca pears absorbs all the milk for about 6-8 minutes.
Crumble in the feta cheese, and the pecorino, stir to melt and season to taste with pepper.
- Spread the mixture evenly in tray and refrigerate overnight.
- Remove from the fridge and cut into squares with a hot, wet knife. Shape with your hands.
Heat the olive oil in a frying pan and fry the croquettes for 3-4 min until golden brown. Serve hot drizzled with balsamic vinegar.
