Ingredients
- 4 cups mushrooms, sliced
- 3 cups celery, sliced
- 1 28-ounce can chopped tomatoes,undrained
- 1 onion, red, chopped
- 1 cup veggie broth

4 tbs olive oil
- 2 tbs peanut butter
- 2 tbsp soy sauce
- 1 tbs ginger, grated
- 2 bay leaves

1⁄2 tsp salt

1/4 tsp black pepper
Directions
In a deep saucepan heat the olive oil and sauté the onions, celery and mushrooms for 7-10 minutes.
- Add the broth and cook for 10 more minutes, adding a bit of water if needed.
- Turn the heat down to low, stir in the remaining ingredients and continue simmering until the soup reaches a thick consistency.
- Serve hot, optionally topped with celery leaves and crusty bread.
