Ingredients
2 Salmon fillets, fresh or frozen
- 2 cups cherry tomatoes

1 tablespoon extra-virgin olive oil

¼ teaspoon salt
1 ½ cup basil leaves

¼ cup extra virgin olive oil
- 3 tablespoons Parmesan cheese, grated
- ½ clove garlic
- 1 tablespoon pine nuts or sunflower seeds

¼ teaspoon black pepper
For the Pesto
Directions
Preheat the oven to 390°F. Place the salmon and cherry tomatoes in a baking pan, season with salt and drizzle with olive and bake for 10-15 minutes until the salmon is cooked through and the cherry tomatoes slightly charred.
In the meantime make the pesto by processing the basil with the parmesan cheese, garlic, nuts or seeds and olive oil in a blender. Season to taste.
- Serve the salmon hot, with a side of tomatoes, generously drizzled with pesto.
