Ingredients
- 2 cups chestnuts
- 2 celery stalks, chopped
- 3 golden shallots, chopped
- 2 garlic cloves, minced
- 4 cups chicken stock
- 1 turnip, chopped
- 1 cup cream

1/2 tsp black pepper
Directions
Bring a pot of salted water to a boil and cook the chestnuts until tender.
Heat the olive oil in a saucepan and sauté the celery, with the shallots for 5 min. Add the garlic, stir and season with salt and pepper.
- Add the stock, chestnuts and turnip and bring to a boil. Simmer for 30 minutes.
- Puree the soup with a blender/stick blender/food processor.
- Whisk the cream to form soft peaks and reserve one-quarter to serve, then blend the remaining into the soup. Serve hot with a dollop of cream.
