Ingredients
2 slices rye bread
- 1/2 avocado, ripe
- 2 eggs
- 3-4 sundried tomatoes
- 2 tablespoons green olives, chopped

4 tablespoons extra virgin olive oil

½ teaspoon salt

¼ teaspoon black pepper
- Optionally: sunflower seeds, sesame seeds and mixed greens to serve
Directions
Bring a pot of water to a boil and boil the eggs for 7-9 minutes.
Scoop out the flesh of the avocado using a spoon and mash with the back of a fork. Stir in the olive oil and season with salt and freshly ground black pepper.
- Spread on each piece of rye bread.
- Top with the eggs, sundried tomatoes and olives.
Optionally sprinkle with seeds and drizzle a little extra olive oil. Serve cold with mixed greens or your choice of seasonal salad.
