Ingredients
- 2 carrots, medium, chopped
- 2 celery stalks chopped
- 4 garlic cloves, minced
- 2 red bell peppers, chopped
- 2-3 Roma tomatoes, diced
- 1 onion, large, chopped
- 3 cups vegetable stock

1 tsp salt
- 1 tbs thyme, dried

1/4 tsp black pepper
Directions
Heat the olive oil in a deep saucepan and sauté the onions, carrots, peppers and tomatoes for 3-4 minutes. Add the garlic and sauté for 2 more minutes, seasoning with salt and black pepper.
- Add the stock, season with thyme and allow to gently simmer for 10-15 minutes, adding water if needed.
- Using a stick blender/food processor/blender process the soup until smooth.
- Serve hot garnished with thyme.
