Ingredients
2 cups whole-wheat pasta of your choice
- 1cup cherry tomatoes
- 1 cup red beans, cooked, drained
- ½ cup corn
- ½ cup parsley

2 tablespoons olive oil
2/3 cup yogurt

1/3 cup olive oil
- 1 teaspoon Provencal spices

½ teaspoon salt

¼ teaspoon black pepper
For the pasta salad
For the yogurt - olive oil dressing
Directions
Bring a pot of salted water to a boil and cook the pasta al dente.
- In the meantime, heat the oil in a non-stick pan. Halve the cherry tomatoes and sauté with the beans and corn for 4-5 minutes tossing carefully.
- Mix with the pasta.
Make the dressing by mixing the olive oil with the Provencal spices, salt and pepper.
- Drizzle over the salad and garnish with fresh parsley leaves. Serve cold.
