Ingredients
4 eggs, large
- 2/3 cup Greek yogurt
- ½ cup cherry tomatoes
- 1 teaspoon Dijon mustard
- 1 tablespoon Italian parsley, chopped

3 tablespoons extra virgin olive oil

¼ teaspoon black pepper
Directions
Hard boil the eggs for 8-10 minutes. Peel and cut into a rough dice.
In a large mixing bowl, combine the Greek yogurt with the Dijon mustard, parsley and extra virgin olive oil. Season with salt and pepper and add the eggs.
- Divide into serving bowls and serve cold topped with halved cherry tomatoes.
