Welcome to your new favorite appetizer! Looking for a delicious and impressive hors d'oeuvre to feed your guests? Look no further than tuna with olive oil mayo in cucumber cups. Ingredients
1 cucumber, large
5 oz tuna, drained
1/3 cup mayo (recipe below)
3 tbs dill (optionally extra to garnish)

1/4 tsp black pepper
1 egg, whole
1 tbs freshly squeezed lemon juice
1 tbs warm water
1 tsp Dijon mustard

1 cup olive oil

1/2 teaspoon salt
For the Mayo
Directions
1. Start with the mayo: Beat the egg in a blender or food processor for 30 seconds on its own. A stick blender would also work. Add the lemon juice, water, mustard and process for 30 more seconds. Gradually pour in the olive oil a few drops at a time while blending until the mixture is emulsified into a thick mayonnaise.
2. Cut the cucumber into 1” thick slices. Scoop out the seeds leaving about 1/4″ on the bottom, to create bite-sized cups. Season with a pinch of salt and set aside.
3. In a mixing bowl combine the tuna with 1/3 cup of mayonnaise and dill. Season with salt and pepper.
4. Fill each cucumber cup with the tuna mixture. Serve cold, garnished with dill.
