Ingredients
- 7 oz chicken breast, chopped
- 3 cups vegetable broth
- 2/3 cup couscous
- 1/3 cup olives, halved
- 1 onion, chopped
- 2 carrots, chopped
- 2 garlic cloves, minced
- 3 tbs dried tomatoes, halved

Directions
1. Heat the olive oil in a saucepan and sauté the chicken with the onions and carrots, for 5-7 minutes.
2. Add the dried tomatoes, garlic, olives and couscous and stir to combine the flavors. Add the broth and season with a bit of salt and pepper. Simmer for 15-20 minutes adding water if needed until the couscous is tender and it reaches a thick stew consistency.
3. Adjust the seasoning and serve hot drizzled with a splash of olive oil.
