Ingredients
3/4 cucumber, medium
1 1/2 carrots, large
1 1/2 cup baby rocket

2 tbsp lemon juice
1 tbsp mustard

1/2 tsp salt
1/4 tsp cumin, powder
1.76 lb Haddock fillets
½ cup oats
2 eggs, large
4 tbsp flaxseed, ground
1 tsp garlic powder
1 tsp lemon zest
1 tbsp parsley, finely chopped
1 tbsp dill, finely chopped

Directions
To make the patties:
1.Heat two tablespoons of the olive oil in a non-stick pan. Dry the fish with paper towels and sauté for 3-5 minutes. Flake and set aside. In a large mixing bowl combine the eggs with the fish, oats, flaxseed, garlic powder, lemon zest, parsley, dill, salt and pepper. Knead to make a dough and shape into patties. Heat the remaining olive oil in a non-stick pan. Cook the fish patties for 3-4 minutes on each side.

2.With a vegetable peeler cut long thin strips of the cucumber and carrot. Mix with the rocket.
