Ingredients
- 2 plantains
1 avocado
2 yellow peppers
- 1/2 onion, yellow
2 tbsp parsley, leaves, fresh

2 tbsp lemon juice

Directions
1. Chop the plantains into bite-sized pieces. Bring a pot of salted water to a boil and cook the plantains for 10-15 minutes, until tender.
- 2. In the meantime, chop the avocado and onion.
3. Mix the avocado with the plantains and onions. Season with salt and pepper, and top with fresh parsley leaves.
4. Drizzle with olive oil and lemon juice and serve at room temperature.
