Ingredients
2/3 cup quinoa
- 1 cup beets, cooked
- 1 large blood orange
- 1 cup wild rocket
- ¼ cup feta cheese or Greek yoghurt

4 tablespoons extra virgin olive oil
- 4 tablespoon lemon juice
- 1 tablespoon honey
- 1 tablespoon Dijon mustard
For the dressing
Directions
Rinse the quinoa and bring a pot of salted water to a boil. Cook the quinoa for 20 minutes until tender.
- Dice the beets and fillet the blood orange.
- Mix with the quinoa and wild rocket.
Make the dressing by whisking together the lemon juice with the extra virgin olive oil, honey and Dijon mustard. Drizzle over the salad and serve topped with either crumbled feta cheese or dollops of Greek yoghurt.
