Welcome back, friends! Today, I am so excited to share with you my favorite Mixed Pepper and Cucumber Salad recipe. It’s crisp, healthy, and bursting with flavor – and it’s ready in just minutes! This salad is a great way to savor all the amazing things this season has to offer; sweet bell peppers of varying hues combined with crunchy cucumbers make for an unbeatable combination. Plus, you don’t have to worry about slaving away over hot stovetops or slave away on meal prep; this salad steps up your side-dish game without taking hours of effort. Get ready for a delicious treat that will take any meal from ordinary to extraordinary in no time flat!
Ingredients
4 multi coloured bell peppers
- ½ pc cucumber
- 1 red onion
- ¼ cup goat cheese, crumbled

3 tablespoon extra-virgin olive oil
- 2 tablespoons lemon juice
- 1 teaspoon honey

½ teaspoon salt

¼ teaspoon black pepper
Directions
Slice the onions and heat one tablespoon of the olive oil in a wide pan. Sauté seasoning with salt and pepper for 5-6 minutes.
- Slice the peppers and the cucumber. Mix in a serving bowl and top with the sautéed onions and crumbled goat cheese.
Whisk together the remaining olive oil with the lemon juice and honey, adding a bit of salt and pepper to make a dressing. Drizzle over the salad and serve.
