Ingredients
1 large potato
- 1 yellow onion
- 1-2 spring onions
- 2 large carrots
- ½ medium sized leak
- 2-3 bell peppers, various colours
- ½ cup broccoli
- ½ cup cauliflower

¼ cup olive oil
- 1 teaspoon thyme

1 teaspoon salt

½ teaspoon black pepper
Directions
Chop all the ingredients into small pieces.
Heat the oil in a deep pot and sauté, seasoning with salt and pepper for 5-7 minutes.
- Cover with boiling water and allow to simmer for 20 minutes.
- Optional: transfer 3-4 ladles of the soup into a blender or food processor and process to get a smooth creamy consistency. Return to the pot with the rest of the soup and stir to combine.
- Serve warm.
