Ingredients
- 6 tomatoes, large, ripe
- 2 aubergines
- 2/3 cup rice
- 1 red onion
- 2 cloves garlic

1/2 cup olive oil
- 1 tsp rosemary, dried
- 1-2 stalks spring onions to garnish

1 tsp salt

1/2 tsp black pepper
Directions
Preheat the oven to 350° F and line a baking pan with parchment paper.
Pierce the aubergines and place on the pan. Drizzle with 1-2 tablespoons of the olive oil, season with salt and bake for 30 minutes until completely cooked through and tender.
- Remove the flesh and mash with a fork. Set aside.
Chop the onion and mince the garlic. Heat the remaining olive oil in a sauce pan and sauté the onion for 3-4 minutes then add the garlic and stir. Add the rice and auberge puree. Gradually add enough water to simmer until the rice is tender but not completely cooked through. Season with salt, pepper and rosemary.
- Slice off the top of the tomatoes and remove the flesh with a spoon.
- Add the rice filling and put the tops back on. Cover with tin foil and bake for 60 minutes until cooked through. Serve warm garnished with chopped spring onions.
