Ingredients
- 1 1/2 cup kidney beans, canned
- 1 cup cherry tomatoes
- 1 onion, medium, red, sliced
- 4 slices bacon
- 2 eggs

4 tbs olive oil

1 tsp salt
- 1/2 tsp oregano, dried

1/4 tsp pepper, black
Directions
Heat 2 tbsp of olive oil in a nonstick pan over high heat and sauté the onions for 3-4 minutes, seasoning with a pinch of salt and pepper.
Add the beans and tomatoes and cook for 2 more minutes seasoning to taste with oregano, salt and pepper.
In the meantime, heat the remaining olive oil, in another pan and crack in the eggs. Cook, sunny-side-up for 5 minutes until cooked through. Season to taste. Add the bacon to the pan to crisp for a minute.
- Serve the eggs with the bean mixture, hot, with freshly baked bread on the side.
