Ingredients
- 1 1/2 lb pork tenderloin, skin removed
- 2 red peppers, sliced
- 1 cup provolone cheese, diced

1/2 cup olive oil

2 tsp salt

1/2 tsp black pepper
Directions
Preheat the oven to 400˚F.
- Cut a slit all the way down the long end of the tenderloin, and open the surface. Cover with a piece of parchment paper and pound with a meat mallet until 1/2" thick.
Place in a baking pan. Place the peppers and cheese evenly over the surface of the tenderloin and season with salt and pepper.
Drizzle with half the amount of the olive oil and roll tightly. Secure with either toothpicks or kitchen twine. Drizzle the top with the remaining olive oil.
- Roast in the oven for 30-40 minutes until cooked through and tender. Brush with the pan drippings and serve hot.
