Ingredients
- 8 ounces penne pasta
- 16 ounces mushrooms, sliced
- 1/4 cup Parmesan cheese, grated

1/4 tsp black pepper
- 1 cup walnuts
- 1 1/2 cups basil, fresh
- 1/2 cup Parmesan cheese, grated
- 1 clove garlic

1/4 cup olive oil
- 1 lemon, juice

1/4 tsp black pepper
- 1/2 tsp thyme, dried

1⁄2 tsp salt
For the pesto:
Directions
Cook the pasta according to packaging instructions. Set aside.
- In a dry pan toast the walnuts for a few seconds until fragrant and slightly golden.
Make the pesto by processing the walnuts, basil, olive oil, garlic, lemon juice, parmesan cheese and black pepper.
Heat the 4 tbs of olive oil in a pan and sauté the mushrooms for 5-7 minutes, until golden brown, seasoning with salt and black pepper. Add pasta and parmesan and mix.
- Divide into bowls with a big dollop of pesto and serve hot.
