Ingredients
4 cups green beans
- 1 cup cherry tomatoes
- 1 cup corn
- 1 tablespoon sesame seeds
- 1 lime, juice

4 tablespoons olive oil
- ½ tablespoon mustard
- ½ tablespoon honey
- ¼ cup basil leaves
- ¼ clove garlic
Directions
Bring a pot of salted water to a boil and blanch the green beans for a minute. We are after an al-dente texture here which works really well with this salad.
- Heat a tablespoon of the oil in a pan and quickly toast the corn.
In the meantime, make the dressing. In a blender process the juice of one lime with the remaining olive oil, honey, mustard, basil and garlic.
In a large serving bowl mix together the cooked green beans with the cherry tomatoes and the corn. Drizzle with the olive oil dressing and top with sesame seeds. Serve at room temperature.
