Grilled Watermelon is easy to make and provides a fresh twist on classic BBQ flavors - this scrumptious treat is sure to be popular amongst all your dinner guests!
Ingredients
6 1.5-inch watermelon wedges
- 2/3 cup feta cheese, crumbled
- 1 red onion, diced
- ½ cup corn
- 1 red pepper, large, diced
- ¼ cup fresh mint leaves
- 1 lemon, cut in wedges

4 tablespoons olive oil + extra to drizzle
Directions
Preheat a grill to high heat.
- In a mixing bowl combine the feta cheese with the diced onions, corn and red pepper. Drizzle with a bit of lemon juice and set aside.
Brush the watermelon wedges with the olive oil and grill under the preheated grill for 2 to 3 minutes per side or until golden char marks form.
Top with the feta cheese mixture, drizzle with the remaining olive oil and serve warm or cold with lemon wedges.
