Ingredients
1 lemon, large, preferably organic and unwaxed.

1 cup extra virgin olive oil
Directions
Scrub the lemon to remove all dirt or waxy residue. Dry with a clean tea towel to remove all moisture.
- Using a vegetable peeler or sharp knife to get big slices of the zest removing the white pith.
Pour the olive oil in a sauce pan and add the lemon zest.
- Warm over low to medium heat not allowing it to boil or simmer. Let it steep over low heat for about 10 minutes, then let it reach room temperature while the lemon zest is still in the sauce pan steeping.
- Strain and transfer into a clean jar or sealable bottle and store in a cool, dark place.
