Ingredients
- 1 cup quinoa
- 3 cups vegetable broth
- 2 cups butternut squash, cut into 1/2 inch chunks
- 1 cup baby spinach
- 1 onion, medium, red, chopped

3 tbs olive oil
- 1 1/2 tbs tahini
- 2 garlic cloves, minced
- 1/2 tsp ginger minced

1/4 tsp pepper, black
- 2 tbs sesame seeds to garnish

3 tbs olive oil
- 1 tbs paprika powder
For the paprika oil
Directions
Bring a pot of salted water to a boil and cook the quinoa for 15-20 minutes. Strain and fluff with a fork.
In the meantime, heat the olive oil in a large sauce pan and sauté the onion, ginger and the garlic for 2 minute until fragrant.
Add the broth and squash and bring to a simmer for 15 minutes. Add the spinach and cook, for 5 more minutes. Season with salt and pepper.
Dilute the tahini in ½ cup of hot water and stir into the soup.
Make the paprika oil by whisking together the olive oil with the paprika powder.
Serve the soup hot, sprinkled with sesame seeds and drizzled with the paprika oil.
