Ingredients
1 large chicken breast, boneless, skinless
- 1 egg
- ½ cup breadcrumbs
- 1 clove garlic

½ cup extra virgin olive oil
2 cups tomato sauce
- 2 cloves garlic
- 1 red onion, small
- 1-2 bay leaves

2 tablespoons extra-virgin olive oil

½ teaspoon salt
- ¼ teaspoon sugar

¼ teaspoon black pepper

Directions
Start with the meatballs:
- Process the chicken breast in a blender or food processor to get a minced meat consistency.
Add the egg, garlic, breadcrumbs, salt and pepper and process again to get a dough.
- Shape into bite-sized meatballs.
Heat the olive oil in a non-stick pan and sauté the meatballs, tossing to cook evenly.
- In the meantime make the sauce:
Finely chop the onion and mince the garlic. Heat the olive oil in a sauce pan and sauté the onion for 1-2 minutes then add the garlic and stir.
Pour in the sauce, season with salt, pepper and sugar and add the bay leaves. Allow to simmer for 3-4 minutes until the sauce thickens.
- Pour over the meatballs and serve.
