Ingredients
- 1/2 cup pomegranate juice
- 1 cup gin
- 5 tbs rosemary olive oil syrup (see below)
- 1 tbs lemon juice
- 4 tbs soda water, to top
- fresh rosemary sprigs and pomegranate arils to garnish
- 1/2 cup water
- 1/4 cup honey

2 tsp olive oil
- 2-3 sprigs of rosemary
For the rosemary olive oil syrup
Directions
Make the syrup:
In a small saucepan, combine the honey, water and olive oil and bring to a simmer. Remove from the heat, add the rosemary sprigs and let them steep for 20-30 minutes.
Make the drink:
In two serving glasses of your choice, add a few ice cubes and divide the pomegranate juice, lemon juice gin and syrup. Stir well.
- Top with soda water and garnish with rosemary sprigs and pomegranate arils.
