Ingredients
1 ½ cup brown parboiled rice
- 3 cups spinach, fresh
- 1 large, yellow onion
- 1 clove garlic
- 1 tablespoon sunflower seeds

¼ teaspoon black pepper
Directions
Chop the onion and the spinach and mince the garlic.
Heat half the amount of oil in a sauce pan and sauté the onion until golden, about 3-4 minutes. Add the garlic and cook for an extra minute, seasoning with salt and pepper. Add the chopped spinach and allow to wilt down for 1-2 minutes.
- Add the rice to the pan, mix well to combine the flavours and gradually add water, a scoop at a time adding more when each scoop has been absorbed, until the rice is cooked through and tender.
Serve warm topped with sunflower seeds and drizzled with the remaining raw olive oil.
