Ingredients
3 cups chickpeas, canned
3 cups vegetable broth
1/3 cup peanut butter
4 tbs Greek yogurt
1 onion, chopped
1 garlic, chopped

4+2 tbs olive oil
3 tbs lemon juice

1 tsp salt

1/2 tsp pepper, black
- 1/2 tsp cumin, ground
Directions
Heat 4 tbs of olive oil in a nonstick pan over high heat. Sauté the chickpeas with the onions for 4-5 minutes, add the garlic and cook for another minute.
Add the broth and peanut butter, season with salt, cumin and pepper. Simmer for 10 minutes.
Transfer into a blender and process until smooth. Add the lemon juice.
Return to the saucepan and cook for 5 more minutes.
Serve hot with dollops of Greek yogurt and a swirl of olive oil.
