I really like this oil - for its country of origin, for its flavor - and for its unique quality that I have not found in any other olive oil (and I've tried a lot of them). That quality is that when I whisk it with balsamic vinegar, I get an emulsified dressing. That probably happens with other vinegars, too, but I haven't tried any other vinegars. I love not having to add anything else to achieve emulsification. Very nice quality olive oil.
