What does Extra Virgin mean?

Extra Virgin is the absolute highest grade for olive oil. EVOO is extracted from fresh olives using a mechanical process without the use of excessive heat or any form of additives or solvents. EVOO has to have less than .8% free acidity, produced by the first pressing of the olive fruit. Kasandrinos International offers only the finest, freshest Greek organic extra virgin olive oil.

What does Cold Pressed mean?

Cold pressed means that no heat or chemicals (which destroy nutrients) are used in the pressing process.

Where does the most olive oil come from?

You may not know that the very best Extra Virgin olive oils are produced in private estates, where the olive oil cannot be mass produced. This is the reason why less than 10% of the world's olive oil production comes out as Extra Virgin olive oil. Did you know that although Italy, Spain, and Greece are the world's top producers of olive oil, Greece is the #1 producer of organic extra virgin olive oil.

What does Organic Olive Oil really mean?

In order for an olive oil to be certified organic by the European Union, it must be a product of organic farming that combines the best environmental practices, a high level of biodiversity and the preservation of natural resources. Organic farmers in the European Union are obliged to respect the health of the soil, water, plants and animals, while making responsible use of energy and natural resources. Organic farmers and processors must comply with strict EU requirements with regular inspections carried out at every stage of the organic chain in order to use the organic logo on their products.

What does the PGI label on your bottle mean?

PGI (Protected Geographical Indication) refers to olive oils with exceptional properties and quality, It demands that the product be produced in the geographical region whose name it bears. In the case of Kasandrinos Greek organic extra virgin olive oil, that is Laconia, Greece (the region of ancient Sparta).

What kind of olives do you use?

All our olive oil comes from the Koroneiko olive tree.
The Koroneiko olive tree is the most common in Greece and is one of the more unique olive tree varieties because it requires a warm and stable climate, which the Southern Peloponnese is known for. The Koroneiko tree is one of the few olive varieties that produce olive oil that have a two-year shelf life in comparison to most olive tree varieties which have a typical shelf life of 6 to 8 months. It is important to know that many olive oil companies elect to blend different varieties of olive oils in order to increase the shelf life, so the olive oil originating from the Koroneiko olive tree is in high demand. Kasandrinos is 100% Greek organic extra virgin olive oil.

Why is low acidity important?

A low acidity is associated with a higher quality, which leads to a more pleasant taste. Moreover, a low acidity typically means the producer pressed the olives shortly after picking, which is crucial for high quality Greek organic extra virgin olive oil.

How should Olive Oil be stored?

Olive oil should be stored in a cool, dark place away from light and heat. When olive oil is exposed to heat, light, and air the valuable nutrients in theGreek organic extra virgin olive oil begin to oxidize and it will begin to lose its fruit flavors. The best containers for olive oil are dark glass or a tin.

Should I store EVOO in the refrigerator?

Olive oil should not be stored in the refrigerator. When chilled, olive oil will become cloudy and eventually solidify or crystallize. Should this happen, the oil is perfectly fine; just leave the oil at room temperature for a time to restore it to its natural state.

What are polyphenols?

Polyphenols are a class of antioxidants found in Greek organic extra virgin olive oil. Greek organic extra virgin olive oil is full of polyphenols, a type of antioxidant that helps protect your cells from damage. One of the most important health components of olive oil is hydroxytyrosol, a potent polyphenol. Hydroxytyrosol can slow the aging process in the skin by stabilizing the cell plasma membrane.

Is EVOO gluten free? GMO Free?

Yes, EVOO is gluten free. It is made only from our organic olives, which are GMO and gluten free.

Why are your oils in dark bottles?

It is a question of quality – dark glass protects the contents from the deteriorating effect of light. Just think of all the health products available in brown bottles, expensive dark green wine bottles and the demise of milk bottles in favor of opaque cartons. Even a few weeks of light exposure will accelerate the aging of olive oil. The fact that so many olive oils are in clear bottles is certainly a question of marketing.
It is also a good idea to store your oil in a dark, cool cabinet rather than on the bright, warm counter top, to slow its aging.

Can I cook with EVOO?

It's a common misconception that you can't expose olive oil to heat. EVOO is suitable for sautés, sauces, marinades, vinaigrettes, in addition to being a great finishing oil. The temperature should be kept below 350 degrees to play it safe.
